Simply delicious Fusion baked Chicken

Ingredients

2 lb of chicken quarters

1 cup chopped mixed sweet peppers

1/2 cup chopped onions

2 tsp Caribbean Fusion Spice it Rite All purpose Seasoning

1 tsp turmeric Sea salt to taste

3 Tbsp olive oil

2 Irish potatoes

2 sprig of fresh Rosemary

Wash chicken and drain. Wash potatoes and cut into quarters. In a container combine chicken and potatoes season with Spice it Rite, turmeric, onions, sweet peppers and salt to taste. Combine thoroughly. Marinate overnight. In a frying pan over medium heat, add olive oil. Remove chicken from seasoning and sear each side for 3 minutes.

In a baking dish transfer chicken along with drippings from pan. Place potatoes and seasoning on top of chicken. Place 2 sprigs of rosemary on top.

Bake in oven for 50 to 60 mins at 400F

Caribbean Fusion - Cold and Flu busting Herbed Vegetable Chicken Soup

**Vegan can omit the chicken

3 lb chicken parts

1 tsp Caribbean Fusion Soul Fusion Chicken Seasoning

1/2 tsp Caribbean Fusion Spice It Rite All purpose Seasoning

2 tbsp Caribbean Fusion Pepper Pot Hot Sauce

2 cups chopped carrots

2 cups chopped celery

1 cup chopped mixed sweet peppers

1 cup chopped chayote

1 -2 cups of chopped kale or collard Greens

1/2 cup chopped asparagus

6 cloves garlic

1 medium chopped tomato

1/2 cup chopped leeks

1/2 chopped onions

3 tbsp chopped fresh thyme leaves

4 Irish potatoes (cut in quarters)

1 tsp Olive oil Salt to taste Cilantro ( garnish)

Season chicken with salt, Soul Fusion chicken seasoning and Spice It Right All purpose seasoning. In a stock pot over medium heat Add olive oil and lightly fried chicken on both sides until it’s lightly brown. Remove from heat and set aside. Using the drippings from the chicken Add chopped vegetables, onions, garlic leeks, thyme and season with salt to taste and Spice it Right All purpose Seasoning. Sauté and cover for 15 minutes. Add 2 quarts of water, the chicken, chopped kale or collards, 2 tbsp Pepper pot hot sauce. Stir and cook covered over medium high heat to 30 mins. Remove chicken and use a fork to shred the meat. Add back to pot along with Irish potatoes. Cook on medium high for an additional 20 minutes. Garnish with cilantro and serve hot
